Niftaliyev's family has been engaged in the production of dairy for more than 20 years. The head of the family, Adalat Niftaliyev, is a specialist engineer. The family's interest appeared in food production after they changed their lifestyle.

"One day we decided to be vegetarian. At that time there were only about 300 vegetarians in the country. The range of food that they can consume was very limited. I thought I would prepare a dairy product for my family which can be abundant and beneficial part of their diet. I began to experiment with different methods. I learned the recipes of the most delicious, unique and high-quality cheeses and a totally novel cheese type came out by adding and trying new ingredients to these recipes.”

The Niftaliyev family's cheese is based on Indian cheese recipes. Currently, this is the only type of cheese that can be fried. According to A. Niftaliyev, cooking and frying the cheese are quite different processes:

"There had to be something that can replace the animal flesh in our dishes and this would be cooked cheese. Either you cook it or boil. Most cheeses do not come to the level of cooking, they start melting. I made a cheese that can be cooked. This is India's "Paner" cheese. But they never smoke the “Paner ".

After that, Adalat set a new goal: to investigate dairy products again and to invent a cheese so that it can be smoked and come out of production directly to the table.

"Milk products, if not fresh, lose their quality. The type of cheese we have created has 3 features:

1. Chemical additives are not added. I would never add a special item to prevent it from being damaged;
2. It can be cooked and can be added to many of the dishes that we used to eat, such as dolma, dumplings and etc.;
3. It is formed in the smoke which is a natural preservative.

At present, Niftaliyev's family produce this cheese at  Guba "ABAD" Factory:

"I was preparing this cheese for my family, but I could not sell it at all. I accidentally heard from my friend that there is an organization named "ABAD" supporting families with many services. They support families not only in the use of equipment but also the organization of the sales. At present, "Baharat" brand has been created for our family, and our cheese is already recognized in the market ".

This should be noted that the Nifatilyev’s cheese brand “Baharat” is available in all  "ABAD" stores and in-stores.
